Cranberry Apricot Relish

This recipe hasn’t been in our family for more than 10 years, but has definitely become our new favorite. Gone is the canned version we relied on for most of my life. Do I hear an “Amen?”

Cranberry Apricot Relish

2 cups water
2 cups sugar
4 cups fresh cranberries
1 cup chopped dried apricots
zest of one orange, chopped finely

1. In a large saucepan, bring the water and sugar to a boil; simmer for 5 minutes.
2. Add the cranberries and apricots; simmer for 6-8 more minutes. Berries will pop.
3. Remove from heat and add orange zest.
4. Pour relish into your favorite serving dish and chill. It will set up on its own.

This is so tasty that we’ve been caught taking spoonfuls right out of the fridge when no one was looking!
