One of my favorite and most used recipes from Mom Madison is that of the incredible cookie, the Whopper. (She named it this, so I hope I’m not infringing on a burger company.) The first time she made them for us, I remember Dad bragging on them and insisting they be huge. He was her biggest fan in every regard, and enjoyed her cooking for their 65+ years of marriage. She has been an amazing model as a “second mom” to countless girls in her community.

The last time we visited her she passed on to us a gigantic jar of peanut butter. I know she had purchased it to make these cookies for Dad, but as he has been gone for over a year, she realized she probably wouldn’t need this ingredient any longer…

And thus, I was inspired to pass this simple and delicious recipe to all of you girls.

Whoppers

2/3 cup butter
1 cup brown sugar, packed
1/2 cup sugar
3 eggs
1 1/2 cups chunky peanut butter
6 cups old fashioned oats
2 tsp. baking soda
1 1/2 cups raisins
12 oz. chocolate chips

1) Preheat oven to 350*F. I use a non-stick baking mat on my cookie sheets.

2) Melt butter and mix into it both sugars, eggs, and peanut butter until smooth.

3) Add the baking soda and the oats. Mix well. Add in the raisins and chocolate chips and stir until well distributed. (I love my stand mixer for this recipe.) The dough will be sticky.

4) Drop cookies onto prepared baking sheet and flatten slightly. I make them about 2-3″ across, unless I want to impress someone and make “whoppers!”

5) Bake for 15 minutes, or until set. If you over-bake them they will be a little dry and crumbly.

Makes about 2 dozen of 3″ size.
